Veggie Mangodi Soup

A healthy and satisfying option- makes a delicious meal itself!

List Of Ingredients:

1. Rasatva Dhania Mangodi – 1 cup

2. Onion – 1

3. Tomato – 1

4. Carrot – 1

5. Cabbage – 1/2 cup

6 .French beans – 1/4 cup

7. Ginger – 1 small piece

8. Garlic cloves – 4

9. Green Chilli – 1

10. Rasatva Black pepper powder – 1/4 tbsp

11. Rasatva Turmeric powder – A pinch

12. Rasatva Red chilli powder – 1/2 tbsp

13. Rasatva coriander powder – 1 tbsp

14. Jaggery – as needed

15. Rasatva cumin seeds – 1 tbsp

16. Rasatva Rock salt – as needed

17. Heeng – A pinch

18. Oil – 1/2 tbsp

Preparatation Time – 10 min

Cooking Time – 15 min

Servings – 2

Recipe:

1. Chop the veggies.

2. Take a saucepan, add enough water on medium flame and let it boil.

3. Add 4 tomato with 2 cuts on the bottom to the boiling water, boil for 5 min.

4. Strain the water, remove the skin of tomato.

5. Take a blender, add tomato, 1 green chilli, 1 small piece ginger and 4 garlic cloves (optional).

6. Blend the mixture smoothly, add water if required and keep aside.

7. Take a saucepan, add 1/2 tbsp oil on medium flame.

8. Add 1 tbsp crushed cumin seeds, a pinch of heeng and saute.

9. Take a saucepan, add 1 tbsp oil on medium flame and let it become hot.

10. Add tomato paste, a pinch of turmeric powder, 1 tbsp coriander powder, 1/2 tbsp red chilli powder, 1/4 tbsp black pepper powder, a little jaggery, rock salt as per taste, 1 glass water, mix and cook for 5 min.

11. Add 1 cup mangodi, chopped carrot, 1/4 cup beans, 1/2 cup cabbage and mix well.

12. Add 2 cups of water, mix and let it cook for 10 min.

13. Switch off the flame and garnish with chopped spring onion.

14. Serve the hot and delicious soup as a side dish or as you want.
